Kerala Rose Cookies also known as Achappam/Acchumurukku are famous deep fried cookies of Kerala. They are crunchy,crispy and have nice golden brown color. They are mostly made for special festivals like Christmas, Onam and Vishu.
Although they are available in shops I wanted to make an egg less version as store bought ones have eggs. I don’t have any problem with eggs though while frying these the smell bothers me a lot. These are not very easy to make,but ones you get hold of the correct method you will perfect them. So here’s the recipe of Kerala Rose Cookies.
- 1 cup rice flour.(100 grams).
- 1/3rd cup maida.
- 1/3 cup + 3 tbsp sugar.
- 1 tsp sesame seeds.
- 150 ml coconut milk.
- Little water.
- Pinch of salt .
- Cardamom powder.
- Cookie molds/ flower mold
- Oil for frying.
In a vessel make batter from rice flour, maida,sugar,sesame seeds,cardamom powder,salt and coconut milk. The batter should be free flowing. If your batter is too thick only than add in water the water to adjust the consistency.
Now heat oil and place your mold inside the oil. So that the mold gets greased.
Let it heat for some time.Than dip it in batter not fully only 3/4 portion should be in batter.
Now drop this in the hot oil care fully.
Give it a shake to un mold it.
Now fry it till golden brown. Every time you have to first heat the mold and dip in the batter. Other wise the batter won’t stick with the mold.
Serve in room temperature.
Those who don’t have this mold can make it with cookie cutter. Method is same dip in oil than dip in batter.
Point to be kept in mind is every time first you have to dip the mold in oil than in batter.
