Semolina Coated Spicy Fish Fry

Hello friends I love to try out new recipes when it comes to fish. Some days it would be typical kerala style sometimes a really innovative dish. So this Saturday I tried fish recipe it looks crispy from out side but is really soft and juicy from outside. If you are fish lover am sure you would love this. So here’s the recipe.

Ingredients

1/2 kg king  mackerel

10-15 garlic cloves

1 tsp kashmiri chili powder

1/2 tsp turmeric powder

1/4 tsp coriander and garam masala

1/2 cup finely chopped coriander leaves

Juice from 1 lemon

1/2 cup semolina and rice flour

Salt as per taste

Oil to fry

Method

Wash and clean fish with little salt and turmeric powder and pat dry.

Grind together garlic, chili powder, turmeric powder,coriander powder, garam masala, and coriander leaves together into thick paste using lemon juice.

Apply this on both sides of fish and let it rest for half an hour.

Mix together rice flour and semolina together and coat the fish in it.

Shallow fry the fish in oil and serve hot.

Mushroom Matar Masala.

Hello friends am back with yet another favorite recipe of mine Mushroom Matar Masala. My mom makes the best mushroom and green peas curry and this is made without any onion. So if you don’t like smell of onions this might be perfect for you. I have added garlic but if you don’t like garlic you can add cashew paste instead. So let’s make this yummy recipe.

Ingredients

200 gm mushroom washed, wiped dry and cut in quarters

100 gm frozen or fresh peas

3 Tomatoes pureed with 4 cloves of garlic(if not using garlic add 10 cashews)

1/2 cup thick cream

1/2 tsp cumin seeds

1/2 tsp turmeric powder

1 tsp coriander and chili powder

1 tsp garam masala

2 tbsp dry fenugreek leaves

A pinch asafoetida powder

1 cup water

3 tbsp oil

Salt according to taste

Method

Heat oil in a pan and add in cumin seeds. When it starts to splutter add in asafoetida , turmeric powder and add in the tomato puree. Cook it till oil floats on the surface.

When oil separates add all the spices and again cook  again till oil separates.

Now add in green peas and water and again cook till it is soft.

Next add in mushrooms and cook till mushrooms are soft . Add cream to this and boil for 1 min.

Add fenugreek leaves and adjust seasoning by adding salt and switch the gas.

Serve hot with roti, naan, para tha or jeera rice.IMG_20170324_163804960_HDR.jpg
