Eggless Chic-pea Stained Glass Cookies

I love to try new variations in cookies. Me and my 5 year old enjoy having homemade cookies. I saw this type of cookies in a very well-known facebook group and hence wanted to give it a try. But I didn’t have rock candies used in this cookies to give stained glass effect. But the beautiful lady had mentioned  that we can also use  hard candies for getting this effect. I was very excited and tried my batch yesterday and they came out perfect.

So here’s the recipe for my Chicpea flour Stained Glass Cookies.

  1.  3/4 cup slightly roasted chic-pea flour.
  2. 2/4 cup all purpose flour.
  3. 1/2 cup butter.
  4. 1/2 cup powdered sugar.
  5. 2 tbsp lukewarm milk.
  6. 1 tsp vanilla essence.
  7. 7-8 hard rock candies small pieces (i have used poppins)
  8. A pinch of salt.

In a bowl with a hand blender cream  butter and sugar till its light and fluffy. Now add in both the roasted chic-pea,all purpose flour, vanilla essence and lukewarm milk. Combine this ingredients  to form a dough. let this dough rest in fridge for 1 hour.

After one hour roll it out and cut it with cookie cutter of your choice(i have used star cookie cutter and small circle cutter.Again give it some rest in the fridge. Meanwhile preheat your oven at 170 degree for 10 minutes. Once preheated arrange the cookies in a greased tray and in the middle add in the small pieces of hard rock candies. Bake them in convection mode for 10-12 mins in 170 degrees or till its done. Once cooled store in airtight container .
